    Anyone here eat Javelina?

    I shot one a few months back and never saw them again... They are back and coming pretty regular. How do you cook them? I've never heard any good things about how they taste. The one I shot went bad by the time I got it and was able to attempt to process it, so I never got to try it.

    The month is wrong on the camera btw

    Looks like they are coming in pretty regular between 1900-2200

      If you want to shoot one for eating, pick out a female. Even the big burly females have big teeth like a boar and make a good mount or Euro. The meat is better than deer meat. There are a few tricks to them though. First, the boars are not very good. Just like a regular hog. they are strong tasting/smelling. The sows are VERY GOOD. Very importantly, when you skin one for eating, just do it like you would a deer only be sure and keep rolling the skin away from the bare carcass and keep your hands off the meat. That gland on their back that emits the foul smelling "ooze" will come off with the hide as you skin it. Don't do anything with it. Just don't cut into it when skinning around it. Once the animal is skinned, carefully remove any loose hairs, then process it just like you would a deer. Of special note also, you can debone a javelina in camp. It is only deer that you must leave the quarters whole with the bone in. Javelina backstrap is very tasty just sliced and chicken fried. If the sow is a young one, the hind quarters can also be sliced and fried. The rest makes excellent pull apart bbq or sausage meat.

      I highly suggest you and you hunting partners take your two allowed by TPWD and bring in guests if possible to take more. They will absolutely take over if you do not control them.

            We've had a few and really like them. Make a good roast. Also, the backstraps are excellent. Alot of people don't like them. I haven't had a bad one yet.

              I'm guessing it is all in the processing and preperation that makes them good to some and not so great to others. Kinda like ferrel hogs.

                  You'll find people either love or hate them. No inbetween, it's all about how it's cleaned and cooked.

                            They good if u know how to cookem,I cooked one last year at the Lincoln Ranch and some other hunters ate it till it was gone!

                            Then they asked what it was "I said JAVALINA" they couldn't believe it,but they will fill a stomach!

                              We have eaten them. I should say we have eaten sows. It was really good. Suprisingly better than I expected.
