I personally don't care. 99% of the fish I catch I release. I will keep a few here and there. If I were to catch a trophy, I would snap a few pics, and more than likely away it would go. To each his own though. If you choose to keep them and eat them, that is your choice. I just fish to relax, kinda like hunting.

If I catch a big yella it gets eaten. Blue cats if over 30 just dont taste very good to me so they go over the side. Channels get the same treatment as the yellas. Any big channel cat 6-7 lbs or a yellow cat over 30 goes into the trough with clean fresh water to clean out a bit before eating.

We Trophy hunt for big cats, blues and Yellows. We filet and cut into chunks all the meat. Can't tell the difference in taste as to their size. I think it has to do with the cleaning process just like venison or any other wild meat. We tend to throw all the smaller, under 5 lbs back for seed.
Some Catfish Pics for your viewing. The 1st pic is the head of the 68 1/2 lb Tawakoni lake record Blue.

I can show you how to catch them biguns, Brandon. Drifting accross holes with cut bait. It's a bit boring for my taste.
I mark big blues on my graph all the time when redfishing, if someone on board wants them we get after it.

Mr. Doc has got this big blue thing figured out, he can surely give you more tips than I can. "My hats off to you sir, you catch some biguns"!

I let the 20+ pounders go. Just makes me feel good!
I keep the rest for the skillet!

Other than me chossing to return to the big girls to the water...i keep what the law allows me too!

Here is one my son caught on his Snoopy reel with a Gummi Bear as bait.

Just kidding...we caught it on the trot line.
