I haven't tried eating them, but the "bucket fishermen" along the creek banks keep them and take them home to eat... so I guess they won't kill you.

Looking at this again I think it's just a stunted channel cat. It's eyes are to big for a mud/bullhead cat.

That's the squarest tail I have ever seen on a channel cat .....especially on one that looks just like a mudcat..
