    WHITE corn meal......garlic powder, black pepper and any good Cajun seasoning.

    Don't forget the Cholula or Louisana hot sauce on each bite. They don't use that alot in the Hill Country like they do in North/East Texas.

      Bass Pro Shops "Uncle Bucks" hot n spicy is bad ***. Its not hot nor spicy but has great flavor..

            Make sure and cut those fillets thin to keep from being watery. I would pat the fillets dry and then either use some milk and egg, or dillute some mustard down so it puts a light coat. Some excellent coating if you don't want to use store bought, is crushed ritz crackers. You have to crush them pretty fine, and they give a great taste. Most of the louisiana store bought are good. you can choose between a tangy or mild. I like to cook up some of both. If your cooking up a bunch of fish, don't batter too early and let set, it will make your coating soggy, and will come of in your oil.
