I put cayenne pepper and/or lemon pepper. Aunt Jemimah's corn meal!

Cornmeal, salt, pepper, and a little Tony's. I don't like flour in mine, as I like it crunchy. 350 degrees for about 10 mins. and you've got a winner...

if you want to hit a grand slam, serve your friends blackened catfish with crawfish topping

when I fry fish, i coat the slabs with yellow mustard , season with Ragin Blaze, and use Zatarains Lemon pepper Fish Fry

            crispy and delicious

Buy the Louisiana fish fry in the blue bag,it is the best and use peanut oil.

Half panco batter, half flour, white pepper, cayenne pepper, season all salt, some garlic powder, minced dried onions, a pinch of salt and a dash of lemon pepper.

Loads of flavor with a great crunch!

I'll second the Mustard. I love to roll my filets in Mustard before frying. Works really well on Salt water fish.

You need to find out what they used on that fish at Nanza. That was some of the best fried fish I have ever eaten!

I do 2/3 yellow corn meal, 1/3 flour.
                        salt
                        pepper
                        garlic powder
                        Tony's

Cut into small strips and fry til they float and are a golden brown.

We are having our 6th annual catfish tourny at a private lake here this weekend, and last year we cleaned 1000# of fish. I will be frying a few, too.
