Potato Ideas!

    Little late, but I like the following:

    Slice them real thin.
    Layer potatoes, cheddar, potatoes, mozzarella, potatoes, fresh grated parmesan
    Sprinkle some italian herbs and garlic on each layer of potatoes
    Bake until done, about 25 minutes at 350, depending on how thick your slices are.

      When we do the tater on the grill thing I cut in half, use a spoon to scoop out the middle, put sausage and half a jalapeno on it and grill till done. tater skins........I love 'em.

          My niece makes cowboy potatoes. Cube them and season with chili powder and whatever other seasonings you like. Of course she uses butter or oil also. I don't have the exact recipe, but they're delish!

            sliced, then just wrap in foil with lots of butter,garlic powder, tony's and pepper and chunk it on the grill

              OK here are a couple:
              1: Quarter lengthwise put in large mixing bowl. Drizzle with olive oil, put some about 4 sprigs of fresh thyme, sea salt and cracked pepper. Mix and coat each tater quarter. Take the quarters and put them on a foil lined baking sheet. Into the oven at 350 for 20 minutes, flipping 1/2 way through.

              2: Sliced 3lbs taters, sliced whole onion, sliced deseeded jalapenos (2)(Red/Orange/Green bell pepper substitute if you don't like hot), brown 1lbs spicy pork sausage, 1lbs raw bacon ends/pieces. Layer in foil, taters, onion, sausage, tater, onion,bacon, tater, onion pepper. Double foil and seal the package. Sea Salt, Cracked Pepper, Lemon Pepper (Tony's if you want to kick it up a notch) to taste (careful because of the salt from bacon/sausage). Throw on top of coals or put into a 250 degree oven and leave for at least 2 hours. This can be cooked at 350 for 45 minutes if you're in a hurry but the slower the better for some reason. You can also throw dove/quail/duck/pheasant breasts, deboned, on top of this mess and get yourself a meal in a bag. I prefer to serve with eggs for breakfast.

                    Quick and easiest way to do it. I always add a few cut up japs to the mix also to give it a little kick.

                      same here but skip the foil and microwave it!!! somehow it just doesnt sound as good though

                        slice the potatoes and lay them on foil cover them with italian dressing make oven with foil and bake or put on the pit

                          Here's something very simple, but delicious. We call them Callaghan Taters! First time we made these was around 3 in the morning. We were on our last night of the hunt on the Callaghan, and cleaning out the coolers. We added a bunch of stuff to some cut up potatoes, wrapped them up, and set them in the mosquite coals.

                          Here is the way I make them now.

                          6-8 potatoes
                          2or3 onions
                          fresh garlic ( you can't put too many cloves in)
                          pound of sausage (Jimmy Dean, Bob Evans, whatever you have)
                          salt and pepper, and any other spices you want to add


                          Cut up the potatoes and onions, dice the garlic cloves. You will need some heavy duty foil, or one of those foil bags.
                          Mix everything together, breaking up the sausage into smaller chunks, wrap it up and that is about it. As I mentioned earlier, we cooked these right in the hot coals first, but you can cook them in the oven at about 375 or on the grill. If you use the oven, put a cookie sheet under them as they will drip!
