Easy - the camera is floated in the bullet in a specially lubricated chamber and has a pre-programmed micro gyro that allows the bullet to basically spin around the camera while keeping the camera upright.

no, it is actually a sequence of still shots that are captured once per rotation at the same orientation then spliced together into the video.
