For me personally, and keep in mind I hybrid hunt... but I find that an expandable pleat gives me the most options. 2 Panels are nice, especially considering that it supports your back much differently than a back band.
My most recent saddle is a CGM Cobra. The quality on it is awesome, but I love the fact that you can modify it however you so choose. I can also make it slim down more than my Tethrd Phantom. It has all sorts of adjustments, and even with only a handful of sits in it, I still find that I have a lot to learn.
There are also aftermarket things that you can purchase, like stuff from Hang Free, Genesis 3D Creations, and a ton of other saddle accessory companies that make a huge difference if you don't like what you have. Fortunately the resale market is pretty good on saddles.
Find what you want in a saddle, try to see one in person or borrow one, and then start narrowing down your decision. Just like buying a bow, the saddle itself is just the beginning because you have all sorts of accessories that one person may love, and another may hate. You won't know them til you try though!
