Me and a buddy and our wives did a taste test today. We fried up some deer backstrap, wild pig backstrap, nilgai backstrap, and thin-sliced tenderized bison tenderloin. All were soaked in milk for a day and then dredged in flour that we seasoned with some cajun spice mix, then fried in peanut oil. We used the same prep steps for all four meats so we could compare and say which was our favorite. Me and the Mrs both thought that nilgai was tops, followed by the deer. The pig was really delicious but a bit tougher than either the deer or nilgai. The bison had the most flavor but we decided that it wasn't really fair to compare the different backstraps to the chicken-fried sliced tenderloin. All in all, it was some really great eating!
