    Pineapple Yard Pimp.....

    Decided to try a new recipe I found. Pineapple yard pimp with a Huli Huli sauce glaze



    Cook your chicken like you would a beer can chicken but use a pineapple in place of the beer/beer can

    I'm smokin mine at 250 over pecan until internal temp reaches 165. Last few minutes glaze with Huli Huli sauce



    Huli Huli recipe:

    1/4 cup soy sauce

    1/3 cup ketchup

    1/2 cup light brown sugar

    1/2 cup pineapple juice

    2tbsp mirin

    1tbsp chili paste

    1tbsp grated ginger

    1tbsp grated garlic (I used minced garlic)



    Combine ingredients in a saucepan, simmer until all dissolvable ingredients dissolve, reduce heat and cook it down until it thickens



    It's my first time attempting this, I'll update with end pics and a "taste review" later

              Well....I forgot to take the picks before cutting it up but my wife took these during the cutting. It was so tender and juicy, it was falling apart and hard to "carve".
              I did say "****...look how moist that thing is"

                              you didn’t miss anything, I forgot to put it on there. The pineapple and Huli Huli sauce gives most of the flavor but I did put a light rub on it consisting of kosher salt, garlic and black pepper
