I like the Tony Chachere Blackened seasoning but I can't always find it.

Cook it outside and keep ice handy! Everytime I blacken crappie fillets we all eat em straight out the skillet and burn our lips!!!

Ouch! Sounds like you like a side of masochism with your fish.

            1 TBLSP CAYENNE
            1/2 TSP THYME
            1/2 TSP GARLIC POWDER
            1/2 TSP BLACK PEPPER
            1/2 TSP TONYS

Get a cast iron skillet heated up outside untill it starts turning white.
Brush fillets with melted butter and liberally apply seasoning.
Lay fillets in skillet and get a good sear on both sides and remove and brush with melted butter again. Enjoy.

Coat fillet with mustard, then coat with your favorite seafood seasoning. Throw in a VERY Hot skillet or on a griddle and flip after two minutes

Thank you, all. You’ve given me several things to try and I’ll keep working through them until the Great White Squirrel Eradicator decides what he likes best.

I did some Tilapia Fillets using Trader Joe's everything but the bagel seasoning with a combo of our very own Ragin seasoning. Turned out amazing!

I think if you order Ragin now, he is tossing in Taco seasoning. So win win.

Been cooking blackened redfish and snapper since Paul P. made it popular. Tried many of the do it yourself seasonings and always go back to the best.
