I've found recipes for shrimp creole but, can I substitute chunks of striper for the shrimp. Make a fish creole.

I don’t see why not. I’d think it would be very similar to courtbouillon at that point. Might look up a fish courtbouillon recipes or just take your fav creole one and use the fish. I’m sure it would be great.
