I've caught a lot of catfish this year and got tired of frying.
Preheat a cast iron skillet with a little oil.
Also preheat an inch or so of oil in a sauce pan.
Cut up catfish fillets into 2-3" pieces.
Season both sides medium to heavy with blackening seasoning. I prefer this one:

Chop up some purple cabbage and cilantro. Shredded cheese is optional.
Cook the catfish in the skillet on medium high. I think I did about 4 minutes per side (depends on thickness of filet and how black you want it)
While that's cooking, fix you up some corn tortillas. Fry in the sauce pan of oil about 10 seconds on each side (or longer to make them crispy).
Make up your tacos with fish, cabbage, cilantro, squeeze on some lime juice, and then use some of this magic deliciousness...
