Anyone ever been to B and B butcher/steakhouse? I did my own take on their carpetbaggers which is a fried oyster on top of a piece of smoked pork belly topped with roumaloud sauce. Then I char-grilled some with butter, bourbon, maple syrup, chipotle and some with garlic, spinach and parmesan. The axis steak was rubbed with olive oil, salt and grilled over oak coals. We served it with a chimichurri sauce along side au gratin potatoes.
