    Hatch Chile Sauce

    I roasted some Hatch Chile`s yesterday and made some sauce for enchilada`s. I was surprised at how hot it was after de-seeding and washing the inside out. This was my first time using them so I really did not know what to expect. They did have a good flavor on the enchiladas, I just had to use the sauce sparingly. I have some left over to try with other things. I think I am going to make some smoked Queso and add some to it. See below for recipe.

    It's that Hatch time of year again, just can't wait. Getting out the vacuum packer to put up some roasted goodness. Anybody got an absolutely fantastic recipe for these???

    I pressure canned like 25 lbs of them last year . This year I’m going to make a sauce .

      There are several different strands of Hatch chilis. But they can be really HOT! Enjoy, it happens once a year. I'll be making hatch speckled trout here shortly

        I put them on everything when I have em. Love it on burgers with a slice of cream cheese.
