Was wondering what to do with some fresh, crooked-neck squash from my garden, and came up with this. Enough for two (hungry) diners. Prep and cooking time: about 15-20 minutes.
Ingredients:
Couple of squash, sliced and cut into about 3/4" squarish x 1/4" thick pieces;
Five eggs, beaten;
Three slices of bacon, cooked crispy and then crumbled/chopped into bits;
Quarter stick of butter;
Half cup of heavy whipping cream;
Handful of shredded sharp cheddar cheese;
Salt, pepper, garlic powder
Directions:
Cook the bacon and set aside.
Melt the butter (medium heat) in a non-stick fairly large skillet.
Add the squash and saute till softened (about 3-4 minutes).
Add the heavy whipping cream and heat until bubbling;
Add beaten eggs and stir in, adding seasonings and bacon bits;
Turn heat to low and add grated cheese all over top without stirring.
Watch for eggs to firm up for a couple of minutes, then turn off heat and let it sit for a couple more minutes until cheese bits meld with the mixture.
Done. Now Eat.
