Here's my bean recipe. No chili, just beans. But it's good.
Soak pinto beans (can substitute or mix with black beans and it's good) in water for several hours to swell them up. Make sure there is plenty of water so they don't soak it all up. Then drain all the remaining water off and rinse them. Doing this will make them a little less "gas-producing".
Cover them in fresh water.
Add a little salt and a good amount of Tony Chachere's cajun seasoning - I just eyeball it based on the amount of beans I have.
Add bacon and/or sausage - make it bite-sized pieces so it's easy to spread around and eat later.
Bring it to a boil and then put it on simmer for however long it says on the bag of beans.
Make sure it doesn't boil dry. Add water, if it starts getting low.
It's really better to let them simmer a half hour or so extra. Even better is to do that and then put them in the fridge until tomorrow. Then put them back on the stove to heat them up again before eating.
To top it off, make some rice to have with them:
Get Uncle Ben's long grain rice (not the quick cook kind)
Measure out the required amount of water, but then heat it to a boil and drop a beef bullion cube or two in it and mix it up.
Put some butter in a pan and heat it up.
Dump the rice into the butter and saute' the rice until it all starts to look kinda clear - doesn't take long.
Now pour in the bullion and bring the rice/bullion to a boil.
Add some Tony's to the rice too, if you like.
When it boils, then turn it down to a simmer and put a lid on it.
Simmer it for 20-30 minutes - however long it takes for the water to disappear.
Pour the beans over the top of the rice, and you're eatin' in style. This rice is also INCREDIBLY good with fried venison and gravy. YUM!

i love this recipe and have won one or two contests with it, but that was YEARS ago and I don't mind giving it up.
5# pork sausage
5# pork choizo
2 gallons pinto beans (drained)
1 gallon black beans (drained)
1 gallon white small beans (drained)
2 gallons kidney beans (drained)
15 jalepones
4 medium brown onions
galic salt, salt and pepper.
Cook the sausage and then break it up. Cook the choizo and drain off the oil. Cook over low heat. Remove veins and seeds from jalopones and cut into small pieces, do the same to the onions and then place them both together and glaze them in the choizo oil.
Season to your particular taste but I love garlic in mine.
Good luck
