I know most times this is used for roast but has anyone ever cut this up and fried them or made steaks?

For me, that's the 1 chunk that always get made into steaks for pan frying.

I also like to roast in the oven and maybe do a revers sear and slice it like a prime rib roast.

I always cut the hind quarters up for steaks. Just muscle them out first, slice, and tenderize if you can.

I cube a lot of my whitetail hindquarters and then use them for stews. Carne Guisada, Beef (Venison) Tips, etc.

I brine mine for corned venison and then smoke some of them into pastrami.
