Has anyone SV a waygu filet? My FIL is 92 and we are cooking him a steak.

When I'm cooking at the house and have time to get fancy, I'll SV my steaks. Never done a wagyu but for typical strips, ill include in the bag:
-S/P
-olive oil
-rosemary
-thyme
-garlic
(Would probably do just S/P on a nicer cut though.)
Drop the meat in the immersion bath set at 126*F for 45. Then finish in a searing hot cast iron pan with butter for about 30secs a side, spooning the butter over the steak as they cook.
