    Duck Recipe's anyone?

    Anyone have any good recipes for ducks??

    stuff with jalapenos and wrap in bacon-----grill to taste

      Ducks

      Chicken fry - Pound breasts pretty flat and chicken fry with a 50/50 mix of flour and pancake mix. Serve with homemade cream gravy, rice or mashed potatoes.

      Smothered Duck

      2 wild ducks, dressed
      salt, cayenne pepper, black pepper
      1 medium white onion, halved
      1 medium white onion, chopped
      1/4 cup corn oil
      1 1/4 cup water or chicken stock
      1 cup sherry wine
      1 tablespoon flour
      1/2 cup water
      2 tablespoons chopped parsley
      Season ducks inside and out with salt and both peppers. Put onion and celery into the cavity of each duck. Heat oil in heavy dutch oven. Brown
      ducks on all sides in the oil. Add chopped onion; stir and cook until wilted. Add 1 cup water (or broth) and sherry wine. Cover and cook in 350 degree oven for about 2 hours, or until meat tests done. Baste often, every 15 minutes or so. Add more water if needed. When cooked, remove ducks to platter. Mix flour with a small amount of water, then stir this into the dripping to make gravy. Stir in parsley. Serve with hot cooked rice. At the end of the meal, clean your hands with a napkin, reach over the table, and slap the tar out of yo' mama.

      I like the jalapeno wraps the most, but theses are my next two favorites. Jason Slocum

              I like to make Kabobs with mine with bacon and pineapple. Cut the breasts into about one inch cubes. I use a mixture of JD, salt and pepper. Put it in a small bowl then roll the peices through the mixture. Put a piece of bacon and pinepple on each side of the meat on a skewer then grill. Pretty tasty

                  A couple weeks ago we shot a few and I picked a couple. I took them that day, injected them with creole garlic and threw them on the smoker at 250 for a few hours. Be sure to keep them based(I used melted butter and chicken boulion), some of the best I've made yet. It's all trial and error but I think the key is to not cook it to fast.

                    I have had duck and sausage gumbo and its not bad but i agree with slocum chicken fried is the best. No matter wat you choose the key is not to over cook them.

                      Cut in strips and chicken fry to medium, hard to beat.

                        Cut slit in the breast and stuff with cream cheese and jalopeno. You can also add some onion. Then use favorite seasonings on the breast and wrap with bacon. Marinate with Italian dressing and grill. This is my favorite recipe for duck.

                          The old "cook it on a plank, throw away the duck and eat the plank" recipe comes to mind.

                            I like to split the breast and stuff cream chesse and baby spinich. You need to soak in salt water to get the excess blood out if you dont the bird will taste gamey.

                              We just made duck jerky out of about 20 ducks worth of breasts. Turned out really good. Didn't like it any other way so we figured we would give it a try. I was pleasantly suprised
