Smoked alligator

Been in the smoker for about 6 hours so far. Brined in salt and crab boil for 16 hours and wrapped with 4 pounds of bacon.

Came out amazing. The meat pulled off the bone with no effort and zero chewiness. We will be doing it again soon. My brother has 3 more in the freezer.
