First cook the TX style chili of your choice. I cooked a version using big Jim red chile pods. Kind of a mild to medium heat. I used fresh diced tomatoes and a touch of sugar to give a nice mellow flavor. Fresh, oregano, chipotle powder, garlic.
Take about 8-10 tamales and cut them into chunks. Line the bottom of a baking dish. Cover with cheese.
Spread your chili onto the tamales.
Smother with cheese.
Bake in a medium oven for 45 minutes.
Serves well with a Mexican lager plus tums .
