A must for cold weather. The broth is the key. A good bone broth. I used short ribs in this one. But you can use whatever you want.
2 lbs short ribs
A cup or however much you want of chopped.
Celery
Carrots
Potatoes
Cabbage wedges
Squash
Corn cob 1/4's
Slice up a yellow onion.
Mince 4 cloves of garlic
Dice 1/2 cup fresh green chile. The hotter the better.
Mince a 1/3 cup cilantro.
1 tbs of oregano
One tomato diced
1 tbl of olive oil.
Add 3/4 stock pot full of water and place ribs in the bottom. Bring to a bubble. Let manteca foam to the top of water and clean off. Add 3 tbs of knorr beef broth granules.Continue at a medium heat boil for about an hour.
Add in intervals of 10-15 minutes
Corn
Celery
Sauté the onions, chile, garlic, cilantro, oregano, tomato in olive oil.
Add to stock.
Add water as needed.
Add every 10 - 15 minutes in this order.
Carrots
Cabbage
Potatoes
Squash
Substitute wild game for the protein if you chose.
Serves well with a pint of any local brewed IPA
