    Turkey Brine

    Let's hear everyone's favorite brine for the bird. I bought one of the Oiless fryers to use this year but want to brine the bird first.

      After several years of doing his bacon butter smoked turkey, I am going to do the maple smoked turkey this year. Brine reciepe is included

      The smoked maple barbecue turkey is, quite frankly, one of, if not the best, smoked turkey recipes I've done yet (if I can say that with a certain amount

        Here's the brine I used last year, simple but so good!

        Brine Ingredients
        6 quarts hot water
        1 pound kosher salt
        1 pound dark brown sugar
        5 pounds ice

          I also throw in some oranges, lemons and the zest from them. The citrus gives a really nice addition to this brine along with fresh thyme and Rosemary...

            This is the one that we always use... Plus on occasion some oranges.

            1 cup kosher salt
            1/2 cup light brown sugar
            1 gallon vegetable stock
            1 tablespoon black peppercorns
            1 1/2 teaspoons allspice berries
            1 1/2 teaspoons chopped candied ginger

            Bring all ingredients to a boil, let cool to room temp and then add bird with 1 gallon heavily iced water

              This year I am trying a "dry brine". Kind of like a dry aging process. Turkey is spatchcocked and smothered in Kosher salt and seasonings but sitting in the fridge uncovered. I am told this will do the same thing a wet brine will but also will ensure the skin is extra crispy.
