For starters, this is an Alton Brown recipe, but it's dang good so I thought I'd share it here. I know it's a sin to not cook on the grill/pit yada yada yada.
He uses a 1.5 in steak but 1 in are easy to come by so I adjusted the time a bit. H-E-B has the USDA Prime Top Sirloins on sale for ~$5 a pound so that's what I used.
Set your steak out for 30 mins prior to cooking. After 25 mins, turn your big burner on high under a cast iron skillet and let it heat for 5 minutes. Sprinkle about a tablespoon of kosher salt in the pan - no oil, butter etc - you are cooking on the salt, this will also season the steak. Add a 1.25-1.5 lb steak to the pan and let it sit for a minute. Flip and let sit another minute. Turn the steak on it's side and hold for 30 seconds. Flip and do the other side for 30 seconds. Wrap in foil and rest for three minutes. Return to the pan and cook for 40 seconds on one side. Flip and cook for 40 seconds. Repeat this two more times (i.e., you will cook both sides for 40 seconds 3 times). Wrap and let rest 5 minutes. Cut and voila.
