sometimes, nightshift aint all that bad! had to cook em in the oven. probably would have tasted better if these were smoked on the pit with some pecan wood, but I didn't hear anybody complain! cooked at 300 degrees til the bacon was done. backstrap was a perfect medium rare to medium. added some candied jalapeno peppers! mmmm!
