Experiment went well tonight!!!
Take chicken breast and fillet to thin out
Make a rub with:
Salt
Season salt
Brown sugar
Pepper
Paprika
Onion powder
Garlic powder
Didn't measure.. But close to equal amounts. Adjust as needed
Rub on breast and grill @ 400 for 15 min per side. Flipping once.
While that's grilling heat cast iron skillet and add 1T olive oil and slice a squash and an onion and sauté over high heat. Cook till onion is transparent and set to the side
After you flip chicken at the 15 min mark start the pico
I used :
1/2 an onion chopped fine
1 tomato chopped medium
1 large jap
Hand full cilantro finely chopped
Salt, pepper, and garlic to taste and juice from 1 large lime
Plate chicken, scope pice on top and squash side... Went perfect with a XX
