Yes, raw…as in tartare, carpaccio, crudo, etc. Raw.

I guess, I wasn’t there, although I was accused of being a neanderthal once or twice. It was a lie, so I hit her with my club and dragged her back to my ca…….home. She didn’t do that anymore !

And, for the record, I like my steak medium rare, not rare. I don’t eat any raw flesh !

      anymore

Got 2 tenderloins from last weekend that I might do this with.

is it best to finely dice this by hand? Or dice and throw in a food processor to mince it? How fine are we talking?

I've always made mine by dicing by hand, I like the coarse chop texture

Is it still okay to do this if the tenders haven’t been frozen yet? I’m gonna vacuum seal/freeze on Sunday

A chef once told me raw meet must be chopped and NEVER processed in a food processor. I didn’t believe so I did my own comparison. Turns out he was right. Not only did using the food processor change (degrade) the texture of the meet, it also (negatively) altered the flavor.

it was like chocolate moaning a delicate, tender delicacy to cat food…from a can.

This thread inspired me to get to Dzuiks in Castroville to grab some parisa. My first time to ever try it, very good 👍

Well I had my doubts about trying it....but 3 pages long and not one single story of anyone knowing someone who got deathly ill from eating it.
Going to give it a shot.

FWIW, I made some using ground venison. It came out pretty good, but not as good as what I’ve bought (but then again it was my first time). I still had no gastrointestinal issues even after the 2nd day!
