Sausage question, beef instead of pork.

    I've put beef brisket in my sausage many times. Love it. Also grind the brisket fat in with deer makes GREAT chili and hamburger meat. Coarse ground brisket and venison will make the best chili you have ever eaten.

      I know a guy that does 1/3 venison, 1/3 brisket and 1/3 pork and his sausage is very good.

        I know a Muslim guy that makes hit sausage with beef due to religion the whole no pork thing. It turns out pretty good but I prefer my pork in sausage. Burger I do use brisket though. May have to try I in some sausage next year as many good reviews as it's getting

          I have used both several times and actually prefer the beef taste in the sausage over the pork.

              X2 we made some this year and it gave it a good flavor. And made a 40# batch of macaroni and cheese sausage for the kids they love it.

                    I have always added about 10% beef tallow to mine. Ask the butcher at the grocery to save you some trimmings and add it in.
