          IMO, serious crawfish eaters will not consume veggies.... they will pinch tails, and suck heads until gorged

            We always use the general rule of 5lb per person, that's figuring men, women and kids. But, we usually add hot dogs for kids also.

              I normally make this for around 15-18 people.

              There are some people that only eat 1-2 lbs of crawfish, and then fill up on the other ingredients. Some that eat everything but the crawfish. And some that can eat 4-5 lbs. It normally balances out pretty well. If you have a whole group of hardcore crawfish eaters, the crawfish themselves won't go as far, but I assure you nobody will walk away hungry.

                When making crawfish are you suppose to boil the corn and potatoes first? How long do you all boil the actual crawfish for?

                  Boil small red potatoes and onions first in a hard rolling boil... this usually takes 15-20 minutes depending on size of potatoes. Pierce them with a sharp knife to determine when they are kinda soft and about 80% done. Transfer to an ice chest and cover as they will still continue to slowly cook

                  Add more seasoning (1-2 lbs) to pot and boil for 5 minutes until dissolved. Then add crawfish into boiling pot of seasoned water. Boil will immediately stop yet keep flame on high and cover with lid. Check the pot every 3-5 minutes and stir with paddle.

                  when you notice a bunch of tiny bubbles coming to surface of water, AND you start to notice a slight gentle boil..... turn OFF the flame. Add your mushrooms and 12-15 frozen ears of corn (small). This will stop the boiling process. Cover with lid and hose down side of crawfish pot with cool water from hose for 3-4 minutes.

                  keep covered and let crawfish soak for 35-45 minutes. Most will begin to sink as they fill up with juice.

                  repeat if necessary and add another 1-2 lbs. of seasoning.
