I cut the fillets into nuggets then put them in a ziplock bag with beer or water, mustard and hot sauce with a lot of seasoning, usually Tony's. (Steamboat Bills if I have it) then put back in the ice chest in the ice for at least 3 hours. I like the Zaterans seasoned fish fry the best, by far! Fry at 375 for 2.5 minutes. I use peanut oil or canola oil. I want to try frying in lard, I heard that's the best from a few people I trust.
