Another good won is sea bass, I like to get the steaks with the skin on, add your favorite seasoning and let a bit of bitter melt through it to finish it off on the grill.
You can do something similar with skin-on redfish fillets. I like to season them and add a touch of olive oil. Put meat side down on a hot grill to get the grill marks, then flip over and finish with skin down. Add butter to meat side while finishing.

Next day remove from sauce and discard sauce not fish lol, then fresh bottle of LA hot sauce add a beaten egg and 1 can of beer put fillets back in. use 1 part flour to 2 parts cornmeal seasoned with cajun seasonings place in a zip loc bag, take fillets from hot sauce shake in corn mill and drop em in the fryer. cook till golden brown remove drain and enjoy. No fishy taste at all
