    i do mine by rubbing a little bit of olive oil on the fish then coating it with cajun seasoning. slap them in a pretty hot cast iron skillet on the grill for a minute or two each side. serve it over some rice of some sort. sometimes i do a "catfish" pontchartrain

      Another good won is sea bass, I like to get the steaks with the skin on, add your favorite seasoning and let a bit of bitter melt through it to finish it off on the grill.

      You can do something similar with skin-on redfish fillets. I like to season them and add a touch of olive oil. Put meat side down on a hot grill to get the grill marks, then flip over and finish with skin down. Add butter to meat side while finishing.

          I like frog bone blackened seasoning. I coat the fillets in butter, generously season. Add butter or oil (if trying to be a little healthier) to the skillet and heat until it just starts to smoke. Lay your fillet in the skillet and it takes mine no more than 1 to 1 1/2 minutes per side to cook.

              If you worry about that kind of stuff, some salmon, depending on if wild or farm raised may be dyed pink.

              Full disclosure, I really like salmon fillets but my wife doesn't so we don't buy it.

                Not really concerned with that, not sure why it just reminds me of a super fishy taste, no idea why.

                Maybe because its so popular. You say fish, I think salmon steak

                    Its purely a mental thing with fish. I LOVE seafood and am not a picky eater with other things at all.

                    Just have to think, I was VERY sick when I got the food poisoning so its just mental thing about the fishy taste.

                      Understand, I still can't eat at a Chinese Buffet restaurant from an episode 9 years ago. Can't do it!

                        I'm the same way about Vienna sausages. Probably wasn't even what got me sick but was the last thing I remembered eating.

                          Screwdrivers (vodka OJ for the non drinkers)

                          I was highschool age..... OMG, got so hammered on them. OJ up the nose... and that will ruin a drink for ya...... hahahaha

                            Next day remove from sauce and discard sauce not fish lol, then fresh bottle of LA hot sauce add a beaten egg and 1 can of beer put fillets back in. use 1 part flour to 2 parts cornmeal seasoned with cajun seasonings place in a zip loc bag, take fillets from hot sauce shake in corn mill and drop em in the fryer. cook till golden brown remove drain and enjoy. No fishy taste at all
