Beef tips and rice is a favorite around my house

Stew (I love stew, happy to eat it at any time during the year)

Dice it up and tenderize it, make some "street tacos"

Kabobs (meat and veggies on a stick, what's not to love?)

Stew meat makes good chili too.

I am partial to Carne Guisada myself. But I agree with the street tacos too. Fast, easy and tasty.

Cut it in strips, beat it tender, make fajitas.

              OR

Cut it in strips, beat it tender, make fried steak fingers with a white gravy for dipping.

Put it in a Dutch oven sear it good on the cook top in some oil, drain and add back to the d/o slice up a onion add to the pot, dump a couple cans of cream of mushroom soup on top with a little water. Cook at 350 for about 2 1/2 to 3 hours. Serve over egg noodles.

I would cut up half an onion, two potatoes, add a bag of mixed vegies and have me a stew for dinner. I love stew and it only takes about two hours to cook from start to end. No real need to let sit and cook super slow for a long period of time unless you have the extra time and want the meat more tender.
