I tried something new last night, and it was the best duck I have ever had. I didnt measure anything, so all measurements are approximate.Adjust to taste.
I tenderized the breasts with a jaccard before marinating
12 or so breasts These were mostly mallards
1/2 cup of soy sauce
1/4 cup rice wine vinegar
1/2 cup brown sugar
2 TBS fish sauce
2 TBS sriracha sauce
1 TBS red pepper flakes
2 green onions chopped
3 cloves garlic chopped
1/4 cup chopped cilantro
1/2 tsp ground ginger
Mix everything in a ziplock bag and marinate in the fridge for four hours. Grille for about two minutes on each side till med-rare.This will produce the most tender, juicy, delicious duck you have ever had. I also sauted some chopped cabbage, onion, and bell pepper in some of the marinade. This would also be great in some fried rice.
