We made a Tortilla Soup, that we saw in HEB. Delicious.
1- 32 oz jar of Cookwell & Company tortilla soup
1- bag of frozen HEB chicken fajitas
1/2 med onion chopped
1- jalapeño chopped
2- med tomatoes diced
1/2 cup chopped Cilantro
2- cups Atry smoked basmati rice
3-cups water
2-poblano peppers chopped
2-Tbl spoons olive oil
In pot combine tortilla soup, onion, cilantro, jalapeño, chicken fajitas and tomatoes
Bring to a boil and then simmer for a hour
While soup is simmering
Add olive oil to pan with poblano peppers and sauté them
Once sautéed add 3 cups water and 2 cups rice to pan
Turn heat on medium/high to bring water to boil. Continue until water is below rice
Turn off heat, cover and let sit for 10 mins
Add rice to bowl, pour soup over it and enjoy.
Easy to make but delicious!
