    Venison Jerky: sliced or ground?

    I'm thawing out my venison and plan on making some jerky using a dehydrator I received for Christmas. I also have High Mountan jerky seasoning and cure. My question is: is it better to just slice it or ground it down and use a jerky gun (which I also have)? I plan on seasoning it tonight and get it in the dehydrator tomorrow. Thanks in advance.

    Sliced has been m best luck. Ground gets to dried out for me.

      The ground is good

      I did the flat and the round last weekend and both turned out good.

      I made 13 lbs then sealed in small bag and froze

        I like both but I prefer sliced. It's more a texture thing for me. I like a little toughness in my jerky.

                    I've never tried the ground, but I did find that if I sliced it and then hammered it with a meat tenderizer it was the best.

                            I tried ground this year. Have to say it will be what I am going back to. I haven't had a problem with it being too dry. A lot easier to chew.
