    Favorite Tenderloin Recipe?

    What's your favorite way to cook whole WT loins? I'm going to cook some up for family tomorrow and want to try something new.

    Lightly coated in olive oil sea salt and minced garlic
    Grilled rare over mesquite coals

      ^^^^^^. This but I add a little coarse ground black pepper.

      Whatever you do, do not over cook it. If it's tenderloin, it only needs 2-3 minutes per side over a hot bed of coals.

      Make sure it's at room temperature before putting on the grill and let it rest for 3-5 minutes before serving.

                    Made this last night and my wife, who isn't a fan of wild game, said it was the best meal she's had in as long as she can remember. My new "go to" recipe for backstraps.

                    Cooked the backtraps whole on the Green Egg to about 125 internal with olive oil, coarse ground pepper, and kosher salt.

                        I use Uncle Chris's steak seasoning with a little garlic powder and lime juice. Get the grill as hot as you can and cook it to medium rare.

                          stuffed with a piece of Andouille sausage and wrapped with maple smoked bacon. Cooked to medium over apple wood

                            Cut thick, wrap with Wright brand thick sliced bacon and toothpick in place. Hit it with a some W sauce, a little course ground black pepper and some Uncle Chris' Steak Seasoning. Grill to med rare. Do not overcook.
