Shot my first sandhill crane this last weekend. I've heard mixed reviews on their delicacy, so I was eager to see if I could come away thinking they were a "rib-eye in the sky".

I breasted the bird and kept the heart. Then I cleaned away all fat and silver.

Next I got my grill up to about 400 degrees and grilled the heart and breasts to med-rare, about 2 mins on each side.

It was me, my wife & 3 teenage boys for dinner so I knew they wouldn't go far enough as just steaks, thus fajita's it was. I let them set for about 5 minutes then thinly sliced them & placed em' in a hot skillet with fajita seasoning.


After searing in the skillet for a few minutes, we prepared the fajita's.

They turned out great. My wife, who's not a big fan of wild game, really loved it and said it was more like "filet mignon in the sky". It was really good!
