    Biscuits, Okra, Backstrap

    . Making my kids favorite dinner

    First I start the biscuits.

    2 cups flour
    3 teaspoons baking powder
    1 pinch salt

    Mix well by hand

    Cut in 3 tablespoons of butter

    Make a well in middle of mixing bowl

    Pour in 1 cup whole milk or buttermilk

    Mix well with spoon and flour top of dough. Dump out on large cutting board.

    Knead a bit (just a couple times), roll out and cut out.



    Preheat oven to 450 deg

    Put them aside to rise while you are frying everything else. . They will bake for 9 mins or so but i start checking at 8.

    This is a simple recipe that can also be used as Pan Campo. Just don't roll or cut the dough. Work it into a loaf about the 6" long and 3" high. Watch it close in the oven.

    The rest of this I'm sure you all have seenu million times.

    Fried Okra:.



    Easy enough

    Wash, cut in 1/3 inch pieces, dip in egg wash or buttermilk mix. Dust in cornmeal/flour 1/1 mix. Fry to crispy golden brown. Dust with Blake's Cajun seasoning. Salt and pepper to taste.



    Bakstrap cut 1/4 inch or so thick. Soaked in milk over night. Pound lightly with tenderizer. Also I have a couple whole tenderloins given the same treatment.



    I season up the flour dip, the egg wash and the finished steaks. Blazin Rage is great on these as it is less salty than Tony Chacheroos.

    Fry em up a couple minutes on each side

    Also made some mac and cheese.



    Pounded flat and fried the tenderloin were incredible. Backstrap was great as always too.

      Heck yea. Just had fried Okra,fried axis steak and Mac and cheese my dang self!!!!!

                The best part is having a cold biscuit and deer steak for breakfast in the AM.
