I made a stock pot full of these rascals late Friday and ate on 'em all weekend. Absolutely awesome:
1 of the larger packets of big dry Lima beans (not baby Limas)
Soak overnight, or rapid boil (beans only) to soften- per instructions on bean bag.
Add one of those large slices (approx. 12" diameter x +3/8" thick diameter or so) of pre cooked ham, or 4-6 smoked pork chops cut into bite size pieces approx. 1/2"by 1"-include ham or pork chop bones for stock taste. Alternatively you can used leftover ham plus bone cut up similarly.
Add:
Cover above contents plus approx. 1.5-2" with two cartons of chicken stock and finish with water.
Bring beans and above contents to boil again, then reduce to simmer for 2 hours.
Pleasant aromas throughout house may force you to dive in after 1.5 hours.

one large diced yellow onion
I/2 to 1 full cut-up garlic
2 -8oz cans of diced tomatoes
I tspn mustard (powder)
1/4 cup vinegar
1 tblspn cooking oil
2 sticks butter
1 tspn ginger
1 bay leaf
2-3 tblspn molasses or sub brown sugar
Salt, pepper & Tony's according to your specific tastes
I/2 to 1 full cut-up garlic
2 -8oz cans of diced tomatoes
