    Brisket Tacos w/ Lime Based Pico De Gallo

    I did a practice run on brisket and ribs last Sunday to get ready for a competition coming up in Gatesville. I decided to make some brisket tacos out of the left overs last night and man ol man am I glad I did. I'm not sure if I have ever made a meal as tasty as this one.

    What you'll need

    1 - Chopped SMOKED Brisket
    2 - Taco shells (or tortillas)
    3 - 1 Tomato
    4 - 1 Jalapeno
    5 - 1/4 Red Onion
    6 - 1 Lime
    7 - Cilantro
    8 - Garlic Salt
    9 - Black Pepper
    10 - Shredded Cheese

    How To
    Finely chop your tomato (I remove the juice and seeds to keep it from getting too runny), your onion, your jalapeno, and your cilantro (you can use as little or as much cilantro as you'd like). Put all of these ingredients in a bowl. squeeze the lime over it, add garlic salt and black pepper to taste and mix well. After you mix it up put it back in the fridge and let it set for at least an hour. Next if you're using taco shells be sure you warmed them according to the instructions on the box. Once your Pico has set and your shells are ready warm your chopped brisket up. I use a glass bowl with a moist paper towel over the top of it and nuke it for a minute or so in the microwave. Spoon in your brisket, top with your lime based pico, then add some shredded cheese on top, the get ready because this flavor combo will blow you away!

              Sounds delicious. I'm a little more of a soft taco fan; HEB has these corn/flour mix toritillas that are outstanding. I'll definitely use your recipe on my next brisket left overs.
