I havent tried with a pig, but this last Thanksgiving I came across an awesome Turkey recipe and I think ut wiuld work great on a pig.

Take several Honey Crisp apples, cut in half to fill cavity. Set in large foil tray(will be wrapped tigkt in foil). On turkey, one cheap bottle of champagne, so probably 2 for a pig, maybe three depending on size. Douse inside heavily with champagne, pour rest all over, inside and out. Garlic powder, black pepper sea salt, and a lil cayenne pepper rub outside heavily. Slow roast at 350 degrees 4-8 hours until right temperature is reached!!! KABLAAAAM!!!!! Should be awesome!! Turkey sure was!!!

Can someone explain to why sea salt is used? It is the same chemically as table salt without the iodine supplement. Is it the coarse grains?

I inject mine with Creole Butter Tony Chachere's injectable and cook them in a Cajun microwave.
