Threw this together tonight.
1# ground meat( i used deer)
Chopped up some frozen green, red , and yellow pepper. Same with onion( i buy the pepper and onion stir fry in frozen foods)
Salsa ( i make my own, recipie below )
Brown rice( i used about 2 cups)
Spices of ur choice
2 cans of pinto beans ( remember this is quick )
1 14oz can diced petite tomatos
Crushed red pepper, onion powder, and vinegar
Brown meat, add spices and peppers with onion. Add a little water. Add pintos then cover and simmer for 20min ( give or take, longer you go, softer pintos get)on low heat.
While meat and beans are simmering, cook rice in microwave.
Then get your blender out and put can of tomatos in blender. Then put crushed red pepper in( use your own judgement of how much), onion powder( again judgement call) salt to taste, then a tablespoon of vineger. Cover and blend.
Put rice in a bowl, cover with pintos and meat, then top with salsa. It would be awesome with cheese and tortilla chips( of which i can have neither). Pix to come
