      I usually slice my squash and zucchini drizzle with olive oil and sprinkle a little sea salt and fresh cracked pepper and bake in the oven.

        My wife took broccoli florets and put them on a cookie sheet. She drizzled them with olive oil lightly then baked them at 450 until the turned brown on the edges. They were amazing! We ate them all and wished we had more. We had done this before but took them out too early. If you cook them until they turn brown on the edges (caramelize), they are amazing.

            My wife learned me about veggies years ago. These days, Since I grill 3-4 nights out of the week, I cut all veggies up, mix with a little olive oil and usually Lawry's, then cook over the fire in a cast iron skillet until done. The cast iron and some smoke from the fire give them great taste and its easy. The family favorites are: Cauliflower and carrots, brussel sprouts (get a little char on them and they are fantastic, even the kiddos love them), yellow squash with zucchini onions and garlic, and eggplant. Tried Broccoli the other night for the first time and it turned out great also

              I do sweet potatoes on the grill too. Just brush with a little melted butter and sugar as they come off. Slice thin to be sure they are fully cooked. 1/4 " is usually good.

                Love some fresh veggies on the grill. Salt, cracked pepper, and ragin blaze.

                I even get the cups of broc, celery and carrots from the Loves truck stop and munch down.
