    Do not...

    Do not smoke a 1 inch ribeye for 1 hour and then in foil at 240 for an hour and then finish in a hot skillet... it comes out a tad over done and sorta solid...(tough just aint close enough)... do anything different cause that way wont work...

    lol now that is good advice. You can probably skip right to the hot skillet next time

                        LOL! Yep, that's a little long! I hope your next attempt works out better!

                        i'll admit that I've screwed up more than one myself. The last one I was cooking for one of the guys at work. I was cooking ribs for our office and he couldn't eat them. I threw a rib eye on the grill in the fire box and took it off when it was just right. I wrapped it in foil and threw it in the upright to keep it warm. It ended up getting to a good well done. Oops! He shoulda had the ribs, they were **** good!

                              Get a meat thermometer with an external alarm...it will let you know when the temperature is perfect!
