    Love attempt at making goat cheese

    Some of our goats at the lease have just weaned their kids, so I milked a couple of them for kicks. Now we are going to attempt to make some cheese, using a Coon007's mom's technique.

    It requires heating the milk up to 180 and then curdling it with lemon juice.
    We'll see how it goes. Milk is heading up and lemons getting juiced.

      We are now calculating the amount of juice we will need to curdle properly. We were told 1/4 cup of juice per gallon and we have .3 gallon of milk. We settled on 1 table spoon. Milk is at 120 now.

            Just hit 180 and we have added the lemon juice. We are also called back and told that it was 1/3 cup for the amount of milk we had.

            No wet wait for the curdling to happen.

              AL! Making love and making cheese are different. I know in your case, both may require a goat... but still its different!

                Now we are straing the whey and adding or salt to it.
                Now to let it drain some more and cool off to get it's shape

                          End product after cooling. It tastes darn good and was rather easy to make. Guess I'll have to start milking the goats more often now. Click image for larger version
