    venison summer sausage help?

    my first to make. got 30 lb done! next step is to cook and smoke? I watch every you tube on how. am asking the tbh pros on how to. at what temperature and how long to smoke? this will be done on bbq smoker. I got the part to pull off at 155 and put in ice water. thanks for your help guys

    We just made 25 pounds a couple weeks ago. We cooked in the oven until the internal temp of the sausage hit 160. Just set the oven as low as it will go and let it cook. We stuffed the 2 pound casings and it took about 4 hours to cook. We do not put any smoke on hours.
