    Marinade for grilling backstrap medallions

    Well, the recipe is for grilling, but I got side tracked and didn't make it outside...so pan seared. Will try grilling next time, although...not sure why. Pan searing was VERY good.

    Recipe is for 8 ounces venison

    1/4 cup Worcestershire sauce

    2 tablespoons soy sauce

    1/2 lime, juiced

    1 tablespoon dried minced onion

    1 teaspoon red pepper flakes

    1 teaspoon dry mustard

    1/2 teaspoon Kosher salt

    1/4 teaspoon thyme

    1/4 teaspoon ground black pepper

    1/4 teaspoon dried, minced garlic

    3 dashes hot pepper sauce (such as Tabasco®), or to taste

            We do something similar. Have found that fresh garlic works better, double all the ingredients and add 1/2 cup of oil. We emulsify it in a blender then soak the meat.

            Remove meat from mix and then sprinkle kosher salt on both sides before grilling!
