        We always mix 12 lbs. of venison to 9 lbs. of wright smoked bacon ends. It will give it some fat and a great smoked flavor. Then season to taste. I generally do not put any sage in this batch of pan sausage. It seems to get a stronger taste as the year progresses.

            Legg's here too. I mix mine somewhere between 60-50% Pork and 40-50% Deer, depending on how much fat the pork has.

            Oh..........is great in a spaghetti sauce also.
