Google fatty sausage roll. Haven't done it with brats which sounds good. Basically you take a pound of sausage put in a gallon ziplock bag. Roll it out, cut open and put whatever ingredients in it you want. I've made pizza ones, veggies and breakfast. Roll that up in plastic wrap to get a good roll. Twist the ends tight. Stick in the fridge. Now for the good part. Make a bacon weave. Wrap the weave around the sausage log and smoke.
Trying with brats next time.
